Anyone who knows me well knows I am not a very good cook. Don’t get me wrong, I can read a recipe and make something, but I just always seem to mess something up, burn a finger, or set off a smoke alarm. So having said that, I really wasn’t going to share recipes on this blog. BUT when I come across something that is so easy, healthy and also delicious, I just have to share it. Another thing is this.. I am the queen of finding recipes on Pinterest, but then I spend hours of racking my brain of what to pair with it for dinner.. so I decided when I do share recipes on this blog, I will share whole meals… So 2 sides that go well with it. For this post, I decided to share Cedar Planked Salmon, which is now one of my favorite go-to super easy meals. It literally takes maybe 5 minutes of prep time and thats for the sides only.
Salmon:
This is the easiest part of the whole meal. You buy it in the frozen section near the fresh seafood. It is already marinated so all you do for this is follow the instructions on the packaging. Make sure you thaw out the day before or set in cold water for about an hour before to thaw. Cook on the wood plank it comes on. The only other thing I do is put a cookie sheet (with foil on top of the cookie sheet) underneath the plank to catch the drippings so it doesn’t get your oven all messy!

Corn:
Get corn on the cob, melt butter ( around 4 tbsps or so) add around 1-2 tablespoons of lemon juice to the melted butter, a dash of salt and cayenne pepper, rub on the corn and roll up in non-stick foil. Bake at 400 for about an hour. Shave off the corn after it’s done cooking and drizzle the remaining butter on top.
Asparagus:
Brush olive oil, salt, pepper, garlic powder on the asparagus and sprinkle with fresh parmesan cheese. Bake asparagus on 400 for about 20 minutes.
That’s it.. This whole meal takes literally about 5 minutes of prep time and an hour of cooking or so, but SO easy for a meal where you just need to throw something in quick and it tastes SO good.. And it is healthy other than the butter and parmesan! 🙂
